The production of our oil is done in full respect of the local tradition, starting from the hand harvest.

                     

The olives are transported to the mill for olive oil making.

The extra virgin olive oil is made from olives grown in the hills surrounding the villa, from the varieties Frantoio, Leccino, Moraiolo . The olives are pressed cold. The product thus obtained is of superior quality, with a very low acidity , an intense aroma and a fruity taste.
